From the highlands of Chiapas, Mexico, this “high grown” lot is all about balance: sweet, sturdy, and quietly complex. Coffees from Mexico’s higher elevations are known for chocolate/toffee sweetness, and this one nails that cozy-meets-bright sweet spot.
We roast it medium to lean into the flavors we love most here: chocolate, caramel, and a subtle brightness that reads like a gentle citrus pop rather than sharp acidity.
I'm not typically a medium roast gal but this one is the exception. I've gotten the Guatemalan in the past. So good!! I decided to try this one because it was recommended by a friend. Its really good and has a depth to the flavor I don't typically find in medium roast coffees. I will order it again.
