These Pacamara cherries all came off the same farms in the same harvest at Gold Mountain Coffee Growers in Nicaragua. What separates them is what happened in the days right after picking. One was dried whole in the sun. One was washed clean and dried on raised beds. One was sealed in a tank without oxygen and fermented twice with real pumpkin spice. Same seed, same soil, same harvest, and three cups you would never guess were related.
Brew them side by side and you can taste processing doing all the work. It's the clearest lesson in coffee we can hand you in a box.
