The Don Clodoveo Natural comes from Cloza Estate, a three-generation family farm tucked into the mountains of Naranjo, Costa Rica. Don Clodoveo Zamora built this farm from the ground up, and his family has been crafting exceptional coffee here since 1970. This lot reaches us through the Farmers Project — a direct trade network founded by Café Con Amor to connect Costa Rica's finest small producers with roasters who care about quality and traceability.
What makes this one special is the combination of the Pacamara varietal and natural processing. Pacamara is a large-bean, expressive variety known for bold, complex cups. The natural process — where the whole coffee cherry is dried intact around the bean — pushes that expressiveness even further, drawing out remarkable fruit character and sweetness.
The result is a coffee that opens with bright tropical fruit and pineapple, almost wine-like in its complexity, before settling into a smooth, lingering toffee sweetness.
