Bali Blue Moon comes from the Kintamani highlands of central Bali, where small family farms work a few acres at a time and grow coffee right alongside citrus trees in volcanic loam soil, between 1,200 and 1,600 meters. The name comes from the beans themselves. After overnight fermentation at each producer's own micro-mill, the parchment is stripped off while the coffee is still damp, a process called Giling Basah, or wet hulling. The beans finish drying exposed to the sun and take on a distinctive blue-gray cast.
That process shapes the cup too. Expect a heavy, syrupy body and gentle acidity, with bright orange and stone fruit sitting on top of dark molasses sweetness and a dry cedar finish. Air roasting on our Sivetz keeps the fruit clear and the body full instead of muddying it.
