There's a corner of southern Ethiopia where the coffee doesn't quite behave like anything else. Banko Chelchele sits in the Gedeb district, high on the plateau where the Gedeo Zone starts leaning toward Guji, and the coffee that comes off these hillsides has a reputation for being loud in the best possible way. This lot is a "supernatural," which means the cherries were held whole in fermentation tanks for a full day before they ever hit the drying beds. That extra step is what turns a good natural into something that smells like a fruit stand and tastes like blueberry jam over milk chocolate. A few hundred smallholders bring cherry to the Chelchele station, each farming a couple of hectares of shaded, mixed-crop land at nearly 2,000 meters. Air roasting keeps all that delicate floral lift intact instead of cooking it off. Pour a cup, let it cool a few minutes, and watch it open up.
