From the highlands of Matagalpa, Nicaragua, this lot from Sabio Farms brings comfort and nuance in equal measure. Grown at 1,000–1,300 meters and processed with an anaerobic washed method, it showcases the precision and care Sabio is known for. In the cup, expect warm caramel and sweet milk chocolate notes up front, followed by a bright, clean finish that adds just the right amount of sparkle.
While the Villa Sarchi varietal and anaerobic process often lean fruity, our roast brings out a more grounded sweetness and a silky body - approachable, balanced, and quietly complex. It's a coffee that rewards attention but doesn’t demand it.
